First dish:
Peruvian ceviche is a traditional dish widely eaten in Peru. The method of preparing it is different to that of ceviche in other places, using lime, fish, sweet potatoes and other foods.
Second dish:
A Peruvian Causa or Causa limeña (from Lima) is a Peruvian dish made of layers of mashed potato and filled with chicken, tuna or other more modern alternatives. The ingredients for Peruvian causa are mainly Peruvian yellow potatoes and ají amarillo paste (Peruvian yellow chilli).
Third dish:
Lomo saltado is a popular, traditional Peruvian dish, a stir fry that typically combines marinated strips of sirloin with onions, tomatoes, french fries, and other ingredients; and is typically served with rice.
Fourth dish:
Olluquito, olluquito con carne and olluquito con ch'arki are traditional dishes in Peruvian cuisine made with ulluku a root vegetable that also has edible leaves. It is an important root crop in the Andean region of South America, second only to the potato.
Pachamanca has been an important dish in Peruvian culture since the Inca Empire. It is generally beef, lamb, pork, alpaca, chicken, guinea pig, and marinated with herbs and spices. It includes potatoes, beans, cassava, plantain, corn, peppers, pineapples, cheese, and other local ingredients.
